Who teaches the class?

Suzi teaches the cake business online tutorials based on sell out face to face business classes. Having used the model herself and having taught hundreds of students who have gone on to set up and run highly successful businesses, Suzi knows that her model works - and works well.

Suzi has years of experience working in the cake industry but also draws on 11 years business experience (prior to making cakes) working in some of the most powerful markets in the world. You will gain the benefit of her experience in setting up a cupcake business based on the model of Pretty Witty Cakes but in addition you will benefit from her knowledge gained as a top lawyer in the City of London where she was employed by some of the world’s highest ranking law firms. Suzi also draws on many of the skills she learnt at Oxford University where she obtained a 1st class honours degree.

In this Project, Pretty Witty Cakes' Guest Guest Tutor Tracey Rothwell shows you how to make a fantastic rockabilly cake!.

This Project is all about using a theme and making a plain cake into something fun without going as far as scuplted novelty cakes. It is a great cake for someone wanting to expand their repetoire but not yet ready to start serious cake carving. If you are not sure what Rockabilly is, Tracey will explain in the tutorial although have a look here for a good explanation. This cake is very in vogue at the moment with more and more brides opting for wedding cakes with a theme.

What you will learn

This Project is all about the 1950s Rockabilly style so all elements in this cake incorporate that. The is a decoration tutorial so Tracey does not cover making the cakes, carving or crumb coating but instead focuses exclusively on decoration. You will learn:

This Project is all about creating a standing boy figure balancing on a football. Kaysie will show you how she works with armatures, frames and structures to make cakes that appear to defy gravity. She will show you all of her techniques so you can make Freddy from beginning to end. You can vary the size and details for a more or less complex cake. Importantly, Kaysie discusses her techniques with food safety in mind.

What you will learn

This cute little footballer boy is all about learning advanced structure cake designs. Kaysie shows you all her tricks and tips for these kinds of cakes. Unlike many gravity defying cakes which are in fact make not made from cake this Project is real CAKE!! In this Project you will learn:

What armature Kaysie uses and how she makes it food safe. Learning with an armature means you can source parts in your own country that are the same or as close as you can find. In the materials tab we have a link to where you can buy the exact parts Kaysie uses.
How to prepare the board and ensure you can lift it easily
How to properly assemble an armature so it doesn't collapse later (Kaysie is known for cakes that you can turn upside down - the are that secure!)
How to tighten the armature and which bits must be tight so the cake never tips
How to make the armature food safe
How to properly cut foam core for templates
How to stack and carve the cakes "mid air"
How to sculpt cakes
How to wrap fondant rather than drape
How to make a realistic football/soccer ball cake by carving a perfect round ball cake
How to work with modelling chocolate
How to use dusts
How to make shorts so they look like they are hollow and full or air
How to make the spindly legs so they support the entire cake
