Overview

In this Project, Pretty Witty Cakes' tutor Leesa Collins shows you how to make a quadruple height cake (with 4 layers).

This Project is all about creating a very tall rectangular cake structure and can be adapted for buildings, red phone boxes or other shaped cakes. This Project will cover everything you need to know about making the structure and carving the cake as well as the full decoration. You will need to spread this Project over 2 days.

What you will learn

This Project is all about quadruple height and rectangular cakes. It is great for a man's birthday (especially Dr Who fans!) and can be personalised accordingly. You will learn:

How to prepare the boards and the structural support for the cake
How to stack 4 tiers (around 8 1 inch layers) and achieve a straight finish
How to cover the sides with panels of fondant
How to create the roof of the phone box
How to make windows
How to make the edible sign
How to airbrush a phone box (optional as you can dust instead)
How to make the light for the roof
How to create shadow and tone when decorating
Making the side details for the phone box
How to work with edible icing sheets

At the end of the Project you will have a fabulous cake which you can use for many occasions. You can adapt it to make it more child like, boy like, female or funny if you prefer.

Hi Leesa

Amazing cake, I love it! I am hoping to make one with carrot cake but am worried it wont be stable enough. I would normally use ganache for this type of project but the person I am making it for has requested carrot cake.

You mention a centre pole but I have never used one before. Any help would be much appreciated.

Hi Tracey,
If you watch the madhatters hat or even the penguin you will see the basic concept for a centre pole.
For this particular cake you would need to ensure that every board you use in the cake has a hole exactly in the centre so as your cake will be perfectly straight.
You connect a dowel to the base board then all the other boards you use will go over that pole to ensure stability.
I have used white chocolate ganache tons of time with carrot cake. You could use a higher ration of chocolate to cream to make the white chocolate a little firmer. But it is a delicious combination
