This Cake Project shows you how to make a full scale standing Penguin cake which would make a great centre piece for any Christmas table or a fabulous Christmas gift. He can also be adapted to be non-Christmassy and a great birthday cake. All our Projects are broken into sections so you can follow each stage in bite size pieces. Overview

In this Project, Pretty Witty Cakes' tutor Leesa Collins shows you how to make this standing Penguin cake.

This Project is all about creating tall cake with bundles of character that would brighten any Christmas or birthday. This Project will cover everything you need to know about making the structure and carving the cake as well as the full decoration. .

What you will learn

This Project is all about perfecting a carved and structured cake which is perfect for a Christmas party. It can also be used for any birthday and personalised accordingly. You will learn:

How to prepare the boards and the structural support for the cake
How to carve the cake so it maximises the cake and minimises waste (there is barely any wastage on this cake)
How to create snow effect on a board
How to create a penguin face and features
How to make textures such as patterns on a scarf
How to make a little Christmas hat for your penguin
How to make a little Christmas present and how to have your penguin holding it
How to cover a tall complex shape and where you can make mistakes and where not.

At the end of the Project you will have a fabulous cake with a brilliant Christmassy feel. You can adapt it to make it more child like, female or funny if you prefer.

Hi Debs
You could use fruit cake but I would probably layer with with white chocolate ganache and crumb coat with either white or dark ganache.

Hello, I would like to know how long the wooden dowel should be, 30 cm is fine?

To get the size of your pole, stack your cakes measure the height. Then also add 1/2 the height of the ball. This should then give you the length of your dowel.

If you are quite generous with your fillings just allow a little extra for that added height.

Hi, I would like to make this cake using fruit cake. Would it be possible to use marzipan instead of ganache and would this adhere properly. Many thanks.
